Lemony Milanese-Style Chicken

This recipe is from Home Chef. It is one of their oven-ready meal kits. You will have to cook the pasta if you are making this with your own ingredients. We have added the extra steps in there for you.

Ingredients

  • 12 oz. Boneless Skinless Chicken Breasts

  • 12 oz. Spaghetti

  • 1 Lemon

  • 2 oz. Cream Cheese

  • 2 oz. Baby Spinach

  • 1/2 oz. Shredded Parmesan Cheese

  • 2 Tbsp. Italian Panko Blend

  • 0.3 oz. Butter

  • 1/4 oz. Parsley

  • 1 tsp. Garlic Salt

Preparation

Cook the Pasta


Bring 8 cups water and 2 tsp. salt to a boil.


Once water is boiling, add pasta and cook until al dente, 8-10 minutes.


Remove from burner. Drain pasta in a colander/strainer and set aside.


While pasta cooks, continue recipe.



Prepare Ingredients


Prepare 2 trays or cooking dishes.


Preheat oven to 425 degrees.



Prepare the Chicken


Pat chicken dry and season both sides with half the garlic salt (reserve remaining for pasta) and a pinch of pepper.


On a plate, combine panko and half the shredded cheese (reserve remaining for garnish). Spread into an even layer.


Place chicken onto panko-cheese mixture, pressing gently to adhere to one side.


Transfer chicken, panko-cheese-side up, to one of the trays.


Spray with cooking spray.



Prepare the Pasta


Halve lemon lengthwise. Cut one half into wedges and juice the other half.


Tear spinach.


Tear parsley.


In second provided tray, combine cream cheese, pasta, butter, spinach, parsley, 1/4 cup water, remaining garlic salt, and 1 Tbsp. lemon juice. Cream cheese and butter will melt as meal bakes.


Cover tray with foil.



Bake the Meal


Bake chicken tray uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.


Bake pasta tray covered in hot oven until spinach wilts and pasta is heated through, 10-12 minutes.


Carefully remove both trays from oven. Stir pasta until combined.


To serve, slice chicken, if desired. Top pasta with remaining cheese and squeeze lemon wedges over to taste. Bon appétit!
