Ingredients
2 (5 oz.) Cod Fish Filets
1 Shallot
1/4 cup White Wine Vinegar or Your Favorite White Wine
2 tbsp. Butter
1 tbsp. Panko Breadcrumbs
2 tsp. Olive Oil
1 tsp. Parsley
Salt and Pepper
Preparation
Prepare Ingredients
Preheat oven to 425 degrees.
Peel and mince shallot.
Cut butter into 1/4" cubes.
Finely chop or mince parsley.
Prepare the Fish
Brush a baking dish or tin with a light coating of olive oil.
Lay the fish filets, skin side down, in the dish.
Sprinkle the shallot on the fish evenly. Add the parsley and season with a pinch of salt and pepper.
Sprinkle the panko breadcrumbs on the fish, being careful not to get too much on the bottom of the dish. Add the cubes of butter on top.
Pour the white wine around the fish making a shallow moat.
Cook the Fish
Bake in the oven for 20-25 minutes. When done, the fish should be cooked through, and the breadcrumbs crispy and golden. Enjoy with any side. Shown with a side of mashed potatoes with parsley.
